2 slices Sourdough

1/2 avocado â€‹

4 tbsp cottage cheese 

2 tsp vegemite (optional) OR chilli honey

1 cup greens (spinach) 

Handful cherry tomatoes 

2 eggs 

SnP 

Lemon juice  

Optional extras to BOOST protein:

Ham 

BBQ chicken

INSTRUCTIONS:

INGREDIENTS 

  1. Toast your sourdough

  2. Heat a pan over medium heat and add in your eggs - cook to your liking. I like to drizzle my honey over my eggs now (if using honey)

  3. Whilst your eggs are cooking layer your sourdough 

  4. If using vegemite start by spreading this across both pieces of cooked toast, then add your avocado and cottage cheese 

  5. Add your spinach over both pieces of toast and then your eggs 

  6. Squeece over your lemon juice and add your SnP 

Prep time: 10 minutes
 
Cook time: 5 minutes

NOTES:

This is my FAVOURITE combo for eggs on toast. The cottage cheese adds an extra boost of protein and the saltiness from the vegemite works perfectly with the avocado if you are craving something salty. If you want something sweet I use the chilli honey. 

I also sometimes add BBQ chicken or ham to BOOST protein content

*I love using sourdough or bakers delight high tin sourdough but any bread works and I always mix it up 

The measurements and ingredients can easily altered to suit your own taste

*OPTIONAL to add or remove any veggies e.g. tomato/spinach but I always try to incorporate some
