1 packet pad Thai noodles

1 brown onion

1 packet firm tofu 

Marinade:
1 tbsp sesame oil
2 tbsp light soy sauce
1 tbsp hoisin sauce
1 tbsp peanut butter
1 tbsp sweet chilli sauce
1 tbsp minced garlic
1 tbsp minced ginger
Veggies:
1 carrot
1 bunch broccolini
1/2 red capsicum
1 cup spinach

Serve with shallots, lemon and sesame seeds 

INSTRUCTIONS:

INGREDIENTS 

  1. Dice your tofu into small squares

  2. Chop up all of your veggies and set aside 

  3. In a small bowl whisk together all of the sauce ingredient and set aside 

  4. Boil your water and cook your noodles following packet instructions

  5. In a large pan, add 1 tbsp of marinade in with your onion and fry until brown

  6. Add your tofu  and cook until brown.

  7. Add in your veggies and cook for 5 minutes.

  8. Add in your sauce and combine.

  9. Once noodles are cooked, drain them and mix into the veggie tofu mixture until coated evenly.

  10. Let that cook on low for a couple of minutes.
    Serve with shallots, lemon and sesame seeds :)

Prep time: 10 minutes
 
Cook time: 20 minutes
