1/4 cup olive oil
1 egg
1/4 cup almond milk
1 tsp vanilla extract
1 ripe banana
1/2 cup brown sugar
1 1/2 cups wholemeal plain flour
1/2 cup quick oats
1 tsp cinnamon
1/2 tsp bicarb soda
1/2 tsp baking powder
Pinch of salt
3/4 cup chocolate chips chips*

INSTRUCTIONS:

You can store in an airtight container in the fridge for up to 6 days

* You can swap out the choc chips for sultanas or chopped nuts for a more breakfast style cookie or I love doing a combination of both 

INGREDIENTS:

BANANA CHOC CHIP COOKIES

  1. Preheat your oven to180 degrees

  2. In a large bowl, mash your banana then whisk in your olive oil, egg, vanilla and milk.

  3. Whisk in your sugar.

  4. Add your dry ingredients and combine

  5. Fold in your chocolate chips.

  6. Line a baking tray with baking paper

  7. Scoop roughly 2tbsp sized balls and spread evenly across your tray

  8. Bake for 15 minutes or until golden brown.

NOTES:

Prep time: 10 minutes

Bake time: 15 minutes

Makes 12-15 cookies
