1 Pita
2 boiled eggs
4 tbsp cottage cheese
1 tbsp light mayonnaise
1 tsp curry powder
1 tsp chilli jam
1 cup lettuce leaves (5 cos lettuce leaves)

INSTRUCTIONS:

CURRIED EGG PITA

Add 2 cups of water to a small pot and place over high heat,

Once the water is boiling add your 2 eggs

Boil for 8 minutes

Remove the eggs and place in a bowl of cold water
-
Peel your eggs and combine in a small bowl with all of the ingredients but the lettuce
-
Heat up your pita in the microwave, sandwich press or pan
-
Fill your pita with your egg mixture and lettuce leaves
Prep time: 10 minutes
Cook time: 10 minutes
NOTES:
*I love using the pita pockets from Coles or Woolworths but sourdough/bread also works great
