1 Pita 

2 boiled eggs 

4 tbsp cottage cheese 

1 tbsp light mayonnaise 

1 tsp curry powder 

1 tsp chilli jam

1 cup lettuce leaves (5 cos lettuce leaves)

INSTRUCTIONS:

INGREDIENTS 

CURRIED EGG PITA 

  1. Add 2 cups of water to a small pot and place over high heat,

  2. Once the water is boiling add your 2 eggs 

  3. Boil for 8 minutes 

  4. Remove the eggs and place in a bowl of cold water 

  5. Peel your eggs and combine in a small bowl with all of the ingredients but the lettuce

  6. Heat up your pita in the microwave, sandwich press or pan 

  7. Fill your pita with your egg mixture and lettuce leaves 

Prep time: 10 minutes
 
Cook time: 10 minutes

*I love using the pita pockets from Coles or Woolworths but sourdough/bread also works great
