500 gram Extra lean beef mince
1 Packet of soft tacos
5 large Potatoes
1-2 Tomato
1 large Cucumber
Lettuce
1 onion
1 cup grated light cheese
Burger sauce
2 tbsp light mayo
1 tbsp low sugar tomato sauce
1 tsp mustard
2 tbsp chopped pickles
2 tsp pickle juice (this is key)
Salt and pepper

Thinly slice your potatoes and season with olive oil and salt and pepper

Cook in air fryer on 200 degrees for 20 minutes mixing half way through

Combine all of your sauce ingredients and se aside

Chop your onion and In a pan fry with olive oil and set aside

Chop up your veggies and set aside

Lay out your soft tacos and add 2 tbsp of your beef mince into the centre of your taco

Flatten your mince with your hands or a spatula

Spray your pan with olive oil or drizzle with olive and add your beef taco beef side down and until cooked through

Flip your taco and sprinkle your grated cheese on top

Leave for a few minutes or until melted

Take your tacos off the heat

Top with your chopped veggies, lettuce leaves and burger sauce
