- 2 eggs

- 2 ripe bananas

- 1 cup Yopro natural OR vanilla yogurt

- 2 tsp vanilla extract

- 1/4 cup honey

- 1 cup quick oats

- 1 cup wholemeal self-raising flour

- 2 tsp cinnamon

- 1 tsp baking soda

- Pinch of salt

 

Toppings per muffin:

- 1-2 tbsp berries

- 1/4 tsp chia seeds

- Drizzle of honey

 

To Serve:

- 1 pouch or small tub of vanilla Yopro

INSTRUCTIONS:

INGREDIENTS 

1. Preheat the oven to 180 degrees Celsius.

2. In a large bowl, whisk the eggs.

3. Add the bananas and mash them well.

4. Whisk in the honey, vanilla extract, and yogurt until combined.

5. Add the dry ingredients (oats, flour, cinnamon, baking soda, and salt) and mix until just combined.

6. Spray or line a jumbo 6-muffin tray.

7. Evenly spoon the mixture into the trays and top with your chosen toppings (feel free to mix in some nuts if you like).

8. Bake for 30 minutes or until a skewer inserted in the center comes out clean.

9. Store in grab-and-go containers and serve with your yogurt when ready to eat. I love warming mine in the microwave, but they’re also delicious cold!

NOTES:

If you don’t have a jumbo muffin tray, you can use a standard 12-muffin tray and halve the baking time. I often prefer two smaller muffins with my yogurt.
