1 bread roll of choice
1/2 packet Thai marinated tofu (from Woolworths)
2-3 tbsp cottage cheese
1/4 avocado
1/2 tomato or 1/2 cup chopped cherry tomatoes
1/2 cucumber
1/2 cup spinach
3-4 baby cos lettuce leaves
1/2 cup roasted pumpkin (I had this leftover)
1 tbsp light mayo

INSTRUCTIONS:

INGREDIENTS 

  1. Pan-fry the tofu for 3 minutes on each side, or until heated through.

  2. Toast your bread roll and layer it with the ingredients of your choice (feel free to mix up your toppings). Enjoy!

Prep time: 5 minutes
 
Cook time: 5 mins
