1 zucchini
1 cup button mushrooms
1 small brown onion
1 can black beans
1 can kidney beans
1/2 cup quick oats
1/2 cup nutritional yeast
Salt and pepper
INSTRUCTIONS:

VEGGIE BEAN PATTIES

Preheat oven on 200 degrees

In a food processor, add you onion, zucchini and mushrooms. Blitz until a fine mixture occurs

Add in your beans and blitz like above

Add in your oats, nutritional yeast and salt and pepper and blitz until everything is combine and a sticky mixture occurs

Line a large baking tray with baking paper

Using an ice cream scoop or a soup spoon, scoop out even dollops of the mixture across the tray

Bake for 30 minutes, flipping at the 15 minute mark so both sides crisp up

Make sure they can slide easily across the tray
Prep time: 10 minutes
Cook time: 30 mins
NOTES:
I served mine with roast veggies and a yogurt sauce (I used Chobani natural yogurt which also boosted the protein content)
I also Paired mine with cottage cheese and salad in a sanga the next day.
