1 1/2-2 packets microwave rice (or 1 cup of cooked rice per container, depending on how much rice you prefer—more for training days, less for rest days)

450g tofu (1 packet)

Olive oil spray

Frozen mixed veggies

The sauce per container

2 tbsp sweet chili sauce

1 tbsp soy sauce

1 tbsp light mayo

1 tsp Dijon mustard

NOTES:

Dice the tofu into squares, spray with olive oil, and bake in the air fryer at 200°C for 10 minutes.

Meanwhile, place about 1/2 packet of microwave rice into each container, followed by 2 cups of frozen mixed veggies.

Add in your sauce ingredients to each container

Add in some fresh mint leaves and shake everything together to combine.

Once the tofu is done, add it to the bowls.

Store the bowls in the fridge, and when you're ready to eat, just heat them up in the microwave!
