Base:
- 2 cups quick oats
- 2 scoops @trueprotein vanilla WPI
- 1/3 cup honey
- 1/3 cup crunchy peanut butter
Caramel:
- 1 1/3 cups pitted dates
Topping:
- 3/4 block dark chocolate
- A sprinkle of salt (optional)

MAKES 20 PIECES
1. Begin by boiling your kettle.
2. Place the pitted dates in a bowl and pour 1 cup of boiling water over them. Set aside to soften.
3. In a large mixing bowl, combine the quick oats and protein powder.
4. Fold in the honey and crunchy peanut butter until well mixed.
5. Press the mixture firmly into a lined square baking tray and set aside.
6. Once the dates have softened, transfer them to a blender. If your blender struggles, add 1-2 tablespoons of the date soaking water to help it blend smoothly. If you have a good blender, try blending the dates without adding water first. Once smooth, spread the date mixture over the oat layer.
7. Melt the dark chocolate in the microwave and pour it over the date layer, spreading it evenly.
8. If desired, sprinkle a little salt on top.
9. Place the tray in the freezer and let it set until hardened.
10. Store in the freezer for later enjoyment!
