2 x Wholemeal English muffins

2 Eggs

2-4 slices of ham off the bone or shortcut bacon

1 tbsp Chilli honey (the secret ingredient!)

2-4 tbsp Cottage cheese

A handful of spinach

2 slices of cheese

Tomato sauce

Salt and pepper

NOTES:

Brunch: High-Protein McMuffins! These are a balanced meal of carbohydrates, protein, and fats, ticking all the boxes for post-training nutrition.

  1. In a pan over medium heat, add your eggs and ham. Once they start to cook, drizzle the honey over them.

  2. Meanwhile, toast your muffins.

  3. Layer your muffins with cottage cheese, spinach, cheese, ham, eggs, salt, pepper, and a drizzle of tomato sauce.
