1/4 cup olive oil
2 ripe bananas
1 tsp vanilla extract
2 grated apples
1/2 cup brown sugar
1 1/2 cups self raising flour
1 tsp bicarbonate soda
1 1/2 tsp cinnamon
Pinch of salt
Crumble:
2 diced apples
1/2 cup quick oats
1 tsp cinnamon
1 tbsp honey

Pre heat oven to 180degrees

In a large bowl whisk the olive oil, eggs and vanilla together.

Add in the smashed bananas.

Grate your apples and add to the mix.

Whisk in your brown sugar

In the same bowl add in the flour, cinnamon, bicarb soda, salt and combine.

Grease and line a rectangle baking tray

Pour your mixture into the tray

To make the crumble
-
Dice your apples (you can peel them if you wish)

In a small bowl combine your diced apples, oats, cinnamon and honey

Spread your crumble over your loaf

Bake in the oven for 40-50 minutes or until a skewer comes out clean

Let cool before slicing OR cut warm and serve crumbled with yogurt or ice cream
