1/4 cup extra virgin olive oil

*1/2 cup maple syrup

2 eggs

1 tsp vanilla extract

1/4 cup unsweetened almond milk

2 large bananas

1 1/2 cups wholemeal self raising flour

1/2 cup almond meal

1/4 cup brown sugar

1 tsp cinnamon

1 tsp bicarb soda

Pinch of salt

INSTRUCTIONS:

You can store in an airtight container in the fridge. 

Below you can see how I turn my banana bread into an everyday balanced snack. There is nothing wrong with having it on its own (which i still do) but when I want a filling nutritious  snack I like to pair it with some protein yogurt or peanutbutter and berries.

Sugar free maple syrup also works in this recipe!

INGREDIENTS 

CLASSIC BANANA BREAD

  1. Pre heat oven to 180 degrees Celsius 

  2. In a large bowl whisk the olive oil, maple syrup and eggs together.

  3. Add in the almond milk and vanilla and whisk

  4. Add in the smashed bananas.

  5. In the same bowl add in the flour, almond meal, cinnamon, sugar, bicarb soda, salt and combine.

  6. Line a loaf tin with baking paper and pour in your mixture

  7. Bake for 50 minutes or until golden and cooked through 

NOTES:

Prep time: 15 minutes

Bake time: 50 minutes

Makes 8-10 slices
