1/4 cup extra virgin olive oil
1/2 cup sugar free maple syrup
2 eggs
1 tsp vanilla extract
1/4 cup unsweetened almond milk
2 medium bananas
1 1/2 cups self raising flour
1/2 cup almond meal
1/4 cup brown sugar
1/4 cup shelled pistachios
1/2 cup dark chocolate chips
1 tsp bicarb soda
Pinch of salt
2 tbsp melted pistachio spread
Icing
170 gram tub vanilla yo pro
1 heaped tbsp melted pistachio
1/4 cup shelled pistachios
INSTRUCTIONS:

Pre heat oven to 180degrees

In a large bowl whisk the olive oil, maple syrup and eggs together.

Add in the almond milk and vanilla and whisk

Add in the smashed bananas.

In the same bowl add in the flour, almond meal, cinnamon, sugar, bicarb soda, salt and combine.

Fold through your pistachios and choc chips

Grease and line a rectangle baking tray

Pour half of your mixture into the tray

Melt 1 tbsp of your pistachio spread and pour over the mixture. Swirl it in with your spatula

Pour the remaining mixture on top

Repeat step 9 by melting another 1 tbsp of pistachio spread and swirling it in

Bake for 50 minutes

Once your loaf is cooked and cooled, prepare your icing.

Melt your pistachio spread in a medium sized bowl and fold through your yogurt.

Once combined spread across your cooled banana bread.

Crush your pistachios and sprinkle on top
